Method
Preheat the
oven to 200c 400f Gas mark 6.
Slice the
potatoes and add to a pan of boiling water, cook for 5 minutes and drain.
Heat oil in a non stick pan, add the onion and cook until soft and golden.
Put milk, half fat spread and flour in a pan and bring to the boil,
whisking continuously. Add three quarters of the cheese and mustard.
Season. Layer potatoes and
onions in an oven-proof dish. Pour sauce into the dish and sprinkle
with the remaining cheese,
Bake for 35
minutes. Garnish with parsley.
Serves 4 Main meal portions and
you may add an addition.
